Tofu pudding is a simple yet decadent dessert that can be made in 5 minute or less. This tofu chocolate pudding is made with only 4 ingredients. It’s velvety smooth texture and delicious sweet taste is sure to satisfy any chocolate craving!

Tofu Pudding

I stumbled upon an article about tofu and different uses for it. Since tofu is made from soy, it isn’t surprising that it can be used to make pudding, ice cream, and tofu pudding.

I usually avoid soy products because of the estrogen-like properties. However, because soy is so low in carbs, I haven’t been avoiding it completely.

The lite silken tofu that I bought listed less than 1g carb per 3 ounce serving. Out of all the tofu packages, the lite was the one with the lowest carb count. So I used it to make this easy tofu dessert.

What is silken tofu?

Silken is a type of tofu that’s undrained and unpressed. Therefore, the curds remain unseparated. Because it has the highest water content it’s the smoothest and creamiest type of tofu. This makes it ideal for using in spreads, sauces, puddings, and desserts.

Is tofu keto friendly?

The average serving of tofu has 2 grams of carbs or less. That makes it safe for staying in ketosis. However, many avoid it because eating too much soy can cause hormonal imbalances. And when hormones aren’t in balance it can be difficult to lose weight.

Ingredients needed

If you’re okay with eating soy occasionally, you’ll love that you can make an instant keto chocolate pudding in less than five minutes. And there's only four simple ingredients in the recipe!

You’ll want to use a good food processor so the following ingredients are well blended into a creamy smooth pudding.

  • Silken Tofu
  • Unsweetened Cocoa Powder
  • Granular Sweetener
  • Vanilla Extract

How to make chocolate tofu pudding?

  1. Cut tofu into chunks and place in a food processor.
  2. Process until it’s a spreadable consistency.
  3. Add sweetener, cocoa powder, and vanilla extract.
  4. Process until smooth and creamy.

Reasons to love tofu chocolate pudding

  1. Tofu has a significant amount of protein so it’s a snack that will really fill you up.
  2. Each serving has only 3 grams of net carbs!
  3. Chocolate tofu pudding is quick and easy to make. I’d say it’s about as fast as the instant pudding mixes in a box. But this recipe contains real food ingredients.

Can you freeze tofu pudding?

Since tofu freezes well, the pudding can also be frozen. So make a big batch and divide in individual freezer safe containers like mini ice cream ones. They keep for three months. Thaw in the refrigerator the day before serving.

    I had a half package of soft tofu left over from another recipe. I scaled the recipe down and put it in my blender. It’s delicious. I divided it into two portions and will have one portion tomorrow for breakfast.

    I used firm tofu, slightly drained, a dash of kosher salt, 1 t vanilla extract and several T (to taste) of date syrup. It has a rich and heavy taste that helps mask the soy flavor. It whipped up with a nice thick texture in the food processor...be sure to sufficiently process it. Taste and correct if needed. The salt helps sweeten it.

    I'm so tired of people hating on soy for the estrogen thing.... the dude who got enlarged breasts was drinking AN ABSURD AMOUNT OF IT.

Millions of people drink more soy milk over cows milk and have no negative side effects from doing so! just look at the majority of Asia!

    Hi Lisa: A friend tried the recipe and he said that the (A) it had a horrible, bitter taste, and (B) with only 10-15 seconds in the blender the texture was completely ruined and became a thin liquid.

    Regarding (A), after questioning him carefully it turned out that somehow he didn't realize that unsweetened chocolate is bitter-tasting and unpalatable to most people, so obviously he just didn't use nearly enough sweetener. He heard the word "chocolate" and just assumed that means "yummy".

    But regarding (B), do you have any suggestions on what to do about how thin it turned out? He said it definitely was not a "pudding" texture at all.

      It's the tofu that gives the pudding it's thick texture. So it had to be the tofu that was used which made it thinner than mine.

        He used a "silken" tofu brand from the supermarket. I don't know how soft it actually was. And he sweetened it with liquid stevia extract, though it's hard to believe that even a good number of drops from such a bottle would add up to enough liquid to be the thinning culprit, particularly since he used the entire lb of tofu. Have you ever found the over-thinning to happen just from blending a little too long? He swore it was only 10-15 seconds.

        Great! Thanks so much for your comments. Look forward to making it for myself. I'll try to let you know what I needed to do in terms of tofu selection, to get the consistency right. I'm even wondering if he had just put it in the fridge for a couple of hours if it would have firmed back up sufficiently. I'll have to experiment with it myself. Sure looks yummy.

        I'd see what happens after it's refrigerated. If it doesn't firm up enough, you could always sprinkle in a thickener like xanthan gum.

    Sorry, but I tried this, it tasted hideous. Definitely not reminiscent of chocolate pudding even though it looked like it.

      Sorry you didn't care for it. Perhaps your tofu or cocoa had an off taste? It may have helped to adjust the sweetener or cocoa amount.

    I love traditional chocolate- tofu pie filling and thought this might work. I only used 1 pound of tofu since I was going to add the 2nd pound after the monkfruit and cocoa powder were blended well. So glad I waited or I would have wasted that as well.
    The monkfruit mixed with tofu changes the quality of both - it creates a vinegar sort of mixture that no amount of cocoa powder or vanilla can cover up.
    yes, the tofu was silken and was fresh. I love tofu. I can eat it plain.
    I also bake with monk fruit and I like this 0 calorie sweetener. The two together did not work.
    Im sorry I wasted the ingredients. The garbage disposal got fed today.

    I wish it wasn't made with soy (tofu). Tofu (soy) contains a phytoestrogen which mimics estrogen (causing gynecomastia...enlarged breasts in men) and can destroy a persons thyroid...which it did mine. And is bad for breast cancer patients as well as any cancer which is hormone fed. This is why my doctor does not want me consuming soy products. Anyone who has a thyroid condition or cancer should avoid soy products. Its too bad because this dessert looks delicious.

      This is a really old recipe that's been on the site since the beginning. These days, I do avoid soy due that fact that it can aggravate the autoimmune disorders that I have. However, this is a very good low carb recipe for those who don't mind eating soy in moderation.

      I have extra firm tofu in the fridge and I would love to make this tomorrow but do you think it could work? How much heavy cream did you add and did you add it because the firm tofu wasn't as soft? Sorry if these are dumb questions I'm just not much into experimentation so I like to know as much as I can before I try a recipe out.

        If using the firm tofu, you might need to add in some extra liquid. But I'd add a little at a time at the end as needed.

      I added 1/3 c of heavy cream and a tsp of msg powder to give it a rich balanced flavor. Turned out well

      You can use any sweetener to taste. These days, I just add in drops of stevia and monk fruit extracts.

      It's just erythritol that has been ground into a powder like confectioner sugar. I think regular might work, but you have to be careful or it might give a grainy texture.

    I stay away from soy due to thyroid issues, but your pudding looks really good!

      These are the Pampered Chef 1-cup Prep Bowls. I use them all the time to bring small snacks like yogurt and pudding to work since they come with covers. I stay away from plastic food containers. With all the glass storage containers, my lunch bag must weigh at least 10 pounds.
